Brown Butter Chocolate Pecan Cookies with Toffee Prep: 30 min. Cook time: 12 min. Inactive 2 hours Yield 30 cookies
For the Buttered pecans 1 ½ cups of chopped pecans 1 ½ tbsp of unsalted butter
For the cookies 2 sticks of butter 2 1/3 cups of loosely packed flour 1 tsp of salt 1 tsp of cinnamon 1 tsp baking soda 1 cup of Dark brown sugar (packed) ½ cup of granulated sugar 1 tsp of vanilla extract 2 large eggs 4oz. of Milk baking chocolate (chopped into chunks) 4oz of Semi sweat baking chocolate (chopped into chunks) 1/3 cup toffee bits 30 pecan halves for decoration(optional)
For the brown butter: Add butter to a small pot on med-high heat and cook until light brown (about 7 min.) stirring constantly. Once browned add the butter and the brown bits to a heat safe bowl and let cool until butter is room temperature (at least two hours). The butter should not be liquid Tip: I found it best to make the night before For the Buttered pecans: Add the butter to a large skillet over medium high heat. Add the chopped pecans and cook stirring occasionally until lighted toasted (3-5 min). Set aside until needed.
For the Cookies: 1.Combine the flour, salt, cinnamon, baking soda, in a large bowl whisk to combine. 2.In a large bowl using a hand mixer or a bowl of a standalone mixer fitted with the paddle attachment add the brown butter and both sugars. Beat on Medium speed until light a fluffy (About 5 min). 3.Beat in vanilla, then add eggs one at a time until each one is combined. Turn the mixer off. 4.Fold in the flour mixture using a spatula, a little at a time until well incorporated. 5.Roughly chop the chocolate into chunks and fold them into the cookie dough. Then fold in the toffee bits and pecans. 6.Roll two table spoon sized scoops between the palms of your hands and place on a parchment lined baking sheet (place each cookie at least two inches apart). Continue until all dough has been rolled. Optional: place pecan half on top of the cookie dough 7.Bake for 12 min. until slightly golden around the edges but soft in the middle.
